Mango Jelly with roasted pineapple .

Use a blender to puree the mango, add Agar agar (read instruction on the packet and add orange juice if necessary). Pour the mix into 4  or 6  glasses half way up and put in the fridge.

Peel one pineapple (Preferably a Victoria pineapple from the Reunion Island or Mauritius. Certainely, the best pineapple I ever tasted).
Roast it whole in the oven for 45 minutes at 180°C with half a glass of water. Keep an eye on it and add water as necessary.
When cooked, cut the pineapple into small pieces. Add those to the glasses.
Top up with vanilla flavoured whipped cream and decorate with orange slices and a chocolate flake.
